To celebrate a formal occasion a well thought out sit down menu is often the best solution. We find (especially with large numbers) the most successful events have menus utilising fab raw products, having a chef treat these products with respect and cooking them honestly and certainly not unnecessarily over complicating things.

Of course Franck's skill is doing all this to stunning effect, and uses just a little over complication in creating a special garnish. Hand making every component of your meal from pates, breads, sauces & biscuits certainly helps make meals a cut above.
